Workflows are mapped one to one. The parallel run lets the team practise on a real environment without consequences, because the old system is still the record until the day you cut over.
The parallel run preserves the existing audit trail and the full transaction history moves with you. The first cycle still signs off on the NetSuite books, and the auditor is walked through the mapping before cutover rather than after it.
Odoo Community is LGPL and runs without us. You can take a full PostgreSQL export at any point and self-host or move to another Odoo provider. No proprietary formats, nothing held hostage — that is the whole point of the open-source destination.
